Osmaniye'de yayılış gösteren bazı bitkilerin uçucu yağlarından yenilebilir film üretilmesi ve filmlerin bazı fiziksel ve kimyasal özelliklerinin araştırılması

Özet

Bu tez çalışmasında, Osmaniye'den toplanan Mentha longifolia subsp. typhoides (ML) ve Satureja cuneifolia (SC) bitkilerinden elde edilen uçucu yağların bileşenleri ve antioksidan potansiyelleri belirlenmiş, sonrasında bu aromatik yağlar kitosan bazlı yenilebilir filmlerin yapısına %1, %2 ve %3 oranlarında ilave edilerek, filmlerin nem, kalınlık, suda çözünürlük, renk özellikleri, opaklık, UV-bariyer, fonksiyonel grup içeriği, toplam fenolik madde, antioksidan aktivite ve mikroyapı gibi karakteristikleri değerlendirilmiştir. ML uçucu yağ içeriğinde toplamda 14 farklı bileşik belirlenmiş ve bunlarda %64.32 oranıyla nepetalakton ana bileşen olarak tespit edilmiştir. SC uçucu yağında ise toplamda 36 farklı bileşen tespit edilmiş ve bunlardan %28.24 oranıyla karvakrol temel bileşen olarak belirlenmiştir. ML ve SC uçucu yağlarının toplam fenolik bileşik miktarları (mg GAE/g yağ) 2.58 ve 2.55 olarak belirlenmiş, DPPH ve FRAP aktiviteleri (μmol TE/g yağ) ise yine sırasıyla 7.42 ve 12.53, 0.35 ve 6.20 oranlarında tespit edilmiştir. %1 ve %2 oranında esansiyel yağ içeren numunelerde UV bariyer özelliği en yüksek olan filmler ML bitkisinden elde edilenler olurken, aromatik yağ oranı %3'e çıktığında ise SC uçucu yağı içeren yenilebilir filmler %transmittans açısından en düşük değerlere sahiptir. SC uçucu yağının yenilebilir bir filmde kullanılmasının ML'ye göre daha başarılı olabileceği sonucuna varılmıştır.

In this thesis, the components and antioxidant potentials of essential oils obtained by microwave extraction from Mentha longifolia subsp. typhoides (ML) and Satureja cuneifolia (SC) plants collected from Osmaniye were determined. By adding 1, 2, and 3%, the characteristics of the films such as moisture, thickness, water-solubility, color properties, opacity, UV-barrier, functional group content, total phenolic substance, antioxidant activity, and microstructure were evaluated. A total of 14 different compounds were determined in ML essential oil content and nepetalactone was determined as the main component with a rate of 64.32%. A total of 36 different components were detected in SC essential oil, and carvacrol was determined as the main component with a rate of 28.24%. Total phenolic compound amounts (mg GAE/g oil) of ML and SC essential oils were determined as 2.58 and 2.55, while DPPH and FRAP activities (μmol TE/g oil) were determined as 7.42 and 12.53, 0.35 and 6.20, respectively. In the samples containing 1% and 2% essential oil, the films with the highest UV barrier properties were those obtained from the ML plant, while the edible films containing SC essential oil had the lowest values in terms of % transmittance when the aromatic oil ratio increased to 3%. It was concluded that the use of SC essential oil in an edible film may be more successful than ML.
