Organic acid and volatile profiles of hexanal treated 'Fortuna' strawberry fruit during storage life

Abstract

Hexanal is known as GRAS (generally accepted as safe) which is an organic volatile compound that can be applied either in spray or vapor forms. In this study it was aimed to identify its efficiacy on chemical and volatile profiles and qualities of berries of 'Fortuna' strawberry. Hexanal application was done as spraying and vapor forms. Application was done using three different doses (0, 0.01, 0.02%), before and after harvest. Effectivenes of hexanal treatment on organic acids content and volatiles of 'Fortuna' strawberry fruits were evaluated stored at 2 degrees C for 15 days storage life. 'Fortuna' strawberry fruits were positively affected based on their organic content and volatile profiles applying preharvest hexanal spray and postharvest hexanal vapor treatment and postharvest quality improved during the shelf life as well.
